A Recipe Worth Saving

I always seem to experiment with healthier ingredients but always forget to write down what I've used, so when my daughter asks can you make that again .... well let's just say it never turns out the same.

So this morning, much like any other time I have a craving I decided to bake something only this time I took notes as I went along. I even took some pictures but I must say I'm not good at that at all.

I must say these are by far the best cookies I have made so I'm glad I did take notes so that I'm not only able to replicate them another day but also so that I can share them here.

Best Ever Molasses Cookies

Ingredients:
1 cup almond butter
1 cup almond flour (or ground almonds)
1/2 cup ground flax
2 eggs
1/4 cup black strap molasses
3/4 cup coconut sugar
1 tsp sea salt
1/2 tsp nutmeg
3/4 tsp baking soda
2 tsp cinnamon
1 1/2 tsp ginger

Directions:
Mix the almond butter, molasses, coconut sugar and eggs. Once mixed add in the rest of the dry ingredients almond flour, flax, salt, baking soda, and spices. Mix well. Drop by spoonfuls onto parchment paper lined baking sheet. Baking in 350 degree oven for approximately 12 mins. Remove from oven and let cool on cookie sheet for 2 minutes before transferring them to a cooling rack.  Makes 2 dozen cookies.



I find that using parchment paper is crucial to my baking. I don't have cookies that are stuck to a pan or destroyed as I try to remove them. With this they come off easily. These cookies are crispy on the outside and chewy on the inside, just the way I love cookies to be.
